Sufra Dayma: Spaghetti Carbonara By Moushira Abdel-Malek Ingredients: 500gms spaghetti Boiling salted water 250gms bacon, ham, or beef cold cuts (squared) 1/2 cup dry white wine 3 eggs (beaten) 1 1/2 cups cream 1/2 cup grated parmesan cheese Extra grated parmesan cheese 1/4 cup chopped parsley leaves Salt + pepper Butter Method: Cook spaghetti in a large quantity of salted boiling water until al dente. While spaghetti is cooking, sauté cold cuts in another pan with a little butter (do not crisp). Add wine and simmer gently over medium heat for 3 minutes. Drain spaghetti well and rinse with hot water. Drain well and return to saucepan. Immediately add cold cuts and wine. Season but with very little salt (parmesan is salty). Blend together, then add combined eggs, cream and cheese. Toss together over low heat. Make sure spaghetti is coated with egg-and-cheese mixture. Sprinkle with parsley. Serve with extra parmesan.
