Sufra Dayma: Spaghetti with Parmesan and Eggs By Moushira Abdel-Malek Serves 4 Ingredients: 500 gms spaghetti 2 tomatoes (coarsely diced) 150 gms grated Parmesan cheese 1/2 cup parsley (finely chopped) 3 eggs 100 gms butter Salt + pepper Method: Cook spaghetti in plenty of salted water until al dent e. Meanwhile beat the eggs and Parmesan cheese together, with a pinch of pepper. Heat the butter in a pan. Add the eggs and stir. When eggs begin to set, remove from stove. Add tomato pieces. Drain pasta and mix with egg mixture. Season to taste. Sprinkle with parsley and serve with a green salad.
