Sufra Dayma: Spaghetti with Shrimps in Chilli Sauce By Moushira Abdel-Malek Serves 4 Ingredients: 500 gms spaghetti 500 gms shrimps, medium sized (shelled, deveined, tails intact) 2 chillies (seeded, finely chopped) 1 onion (finely chopped) 1 tsp crushed garlic 1/2 cup parsley leaves (chopped) 1 cup tomato juice Juice of 2 lemons Salt + pepper + basil + allspice + 1/2 tsp dry mint 2 tbsp extra virgin olive oil Method: Cook spaghetti in a large saucepan of boiling salted water until al dente. Drain well and return to pan, reserving a quarter of a cup from its waters. In another saucepan, add olive oil. Heat and add onion. Stir until translucent. Add garlic and spices. Stir until fragrant, over medium heat. Add all other ingredients except shrimps and pasta. Stir, cover and allow to cook until reduced and thickened. Add shrimps. Stir to combine and cover to cook for ten minutes only. Add reserved waters to spaghetti. Pour shrimps mixture over pasta. Stir gently to combine and serve hot.
