Sufra Dayma: Pasta with Garlic Prawns and Basil By Moushira Abdel-Malek Serves 4 Ingredients: 400 gms linguine pasta 750 gms king prawns (peeled, tails intact, deveined) 6 spring onions (thinly sliced with good green parts) 2 garlic cloves (crushed) 1/2 cup shredded fresh basil 1 large red chilli (deseeded, thinly sliced) 3 medium tomatoes (finely chopped) 2 tbsp extra virgin olive oil Salt + pepper Method: Cook the pasta in a large saucepan of salted boiling water, until al dente. Drain. Meanwhile, heat two teaspoonfuls of oil in a large frying pan over medium heat. Add the prawns and cook, stirring occasionally, until prawns curl and become orange in colour (3-5 minutes). Add the chilli, onion and garlic, stirring for one minute or until aromatic. Add the pasta, tomato and basil to the pan. Gently toss until well combined and heated through. Season with salt and pepper, and drizzle remaining oil. Gently toss until well combined. Divide among serving bowls to serve.
