Sufra Dayma: Garlic Prawns By Moushira Abdel-Malek Serves 4 (as a starter) Ingredients: 24 large-sized prawns (peeled, deveined, tails intact) 5 large garlic cloves (finely chopped) 1 large red chilli (deseeded, finely chopped) 1/4 cup parsley leaves (chopped) 2 lemons (rind grated) Juice of 2 lemons 2 tbsp olive oil 60 gms butter Salt + Pepper Method: Heat butter and oil in a large frying pan, over medium heat, until hot. Add garlic and chilli. Cook stirring, for 2-3 minutes, or until soft and aromatic. Increase heat to high and add prawns. Cook, tossing, for five minutes or until prawns just turn pink. Add parsley, lemon rind, salt and pepper. Toss to combine. Add lemon juice over prawns. Serve immediately with crusty French bread.
