Sufra Dayma: Spicy Stir Fried Prawns By Moushira Abdel-Malek Ingredients: 300 gms large prawns (shelled and deveined) 2 hot red chillis (chopped) 2 tsp crushed garlic 2 tsp fresh ginger (grated) 4 heads spring onions (chopped with greens) 1/2 cup coriander leaves (chopped) 4 tbsp soy sauce 1 tbsp ketchup Juice of 2 lemons Salt + pepper Oil for stir frying 1 tbsp sesame oil for flavour Method: Heat the oil in a wok. Add the garlic, ginger and red chillis. Stir fry swiftly and quickly add prawns. When they change colour and start cooking, add spring onions, sesame oil, soy sauce, ketchup, lemon juice and season to taste, stirring after each addition. Add very little hot water, if necessary. Add coriander and remove away from heat. Serve with steamed or fried rice.
