Sufra Dayma: Spicy Stir-Fried Prawns By Moushira Abdel-Malek Ingredients: 1 kg uncooked medium- sized prawns 2 tbsp corn oil Marinade: 1 tbsp peanut oil 1 tbsp crushed garlic 1 tbsp teriyaki or fish sauce 1 tbsp balsamic vinegar 1 tbsp tabasco sauce 2 tsp finely chopped lemon grass 1/2 tsp ground cumin 1/2 tsp ground coriander 1/2 tsp curry powder 4 green onions (chopped) 2 tsp honey Salt + pepper + allspice Method: Shell and devein prawns, leaving tails intact. Wash well under running tap water and strain. Combine all ingredients of marinade in a large bowl. Add prawns and mix well to combine. Cover and refrigerate overnight. Heat oil in wok or a large pan. Stir fry prawn mixture in batches, until prawns are crimsoned and cooked through. Serve with crusty bread and tehine dip.
