Sufra Dayma: Chicken in Creamy Mustard Sauce By Moushira Abdel-Malek Serves 4-6 Ingredients: 1 chicken (chopped into 8 pieces) 1 tbsp flour 2 tbsp Dijon mustard 1 tbsp lemon juice 1/2 cup chicken stock 2-3 cups whole milk 1 tsp crushed garlic 1 tbsp chopped parsley leaves Butter + oil + 2 small cubes butter (extra) Salt (to taste) + black pepper Method: In a large cooking pan, heat some butter and oil. Fry chicken pieces to brown on all sides and remove from pan. Sprinkle flour on remaining residue in pan. Add cubes of extra butter. Stir in garlic to combine, then add mustard. Add stock and juice, then add milk gradually, stirring to form a thick, creamy sauce. Bring back chicken to pan. Cover and cook over medium-low heat, until cooked, stirring occasionally. Add milk if necessary. Pour into serving bowl, and sprinkle parsley on top. Serve with pasta or boiled potatoes.
