Sufra Dayma: Chicken with Tarragon By Moushira Abdel-Malek Ingredients: 6 chicken breast fillets Salt + pepper 30 gms butter 1 tbsp oil Sauce: 30 gms butter 1 tsp crushed garlic 2 tbsp chopped fresh tarragon 1 tsp lemon juice 1 tsp Dijon mustard 1/2 cup cream 1/3 cup brandy Salt + pepper Method: Heat oil and butter in a large frying pan. Add chicken to cook over high heat until lightly browned on both sides and tender. Season and remove. Add sauce on top and serve with boiled or mashed potatoes. To prepare sauce: Heat butter and garlic in small saucepan. Add combined tarragon, mustard, lemon juice, brandy and seasoning. Bring to the boil. Reduce heat and simmer uncovered for 2 minutes. Stir in cream gradually and reheat without boiling.
