Sufra Dayma: Chicken in Creamy Turmeric Sauce By Moushira Abdel-Malek Serves 4 Ingredients: 750 gms chicken breast fillets (cubed) 1 onion (chopped) 5 cloves garlic (thinly sliced) 2 tbsp Dijon mustard 10 green pickled olives (pitted, quartered) 1/4 litre cream 1 green chilli, chopped (optional) 1 tsp rosemary Butter +oil Salt (to taste) + pepper + turmeric + allspice Method: Heat butter and oil in a medium cooking pan. Add onion and garlic. Stir until soft. Add green chilli. Add chicken cubes. Stir to slightly brown. Add seasoning and stir. Cover and allow to release its juices over medium-low heat. Add very small amount of hot water when necessary, until chicken is done, stirring to combine after each addition. Add mustard and stir in. Add cream and olives. When about to bring to the boil, remove from heat. Serve with rice or pasta. N.B.: You may add fresh or canned mushrooms to this recipe.
