Three kinds of kofta

Beef kofta with rice
Ingredients:
1 small onion
2 cloves garlic
1 kilo of ground meat
1 tablespoon of minced parsley
1 tablespoon of minced mint
1 cup of rice
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of beef spice
Frying oil
Preparation: Mince the onion and the garlic, and then add them to the meat, along with minced parsley and mint. Soak the rice in water for 15 minutes, and then strain the water. Grind the rice then add to the meat mixture and season with salt, pepper, and spices. Grease your palm with little oil, and then use your hand to shape the meat into balls or fingers. Fry meatballs or fingers in the oil.
Rice kufta with tomato sauce and potato fingers.
Ingredients:
1/2 kilo fried rice kofta (see recipe above)
1/2 kilo potato fingers
2 tablespoons corn oil
1 onion
4 cloves garlic
4 cloves mastic gum
A sprinkle of black pepper
1 cup of tomato juice
1 liter of meat stock
1/2 teaspoon salt
1/2 cup frying oil
Preparation:
Make the kofta as shown in the pervious recipe, and then fry potato fingers until they are half cooked.
Heat oil until boiling, then add a whole onion till it reddens. Do the same to garlic cloves. Add four cloves of mastic gum and little black pepper. Add tomato juice and leave the mix to heat until it has stewed.
Add the stock and a little salt to the oil-tomato juice mixture and leave until the mixture boil. Add kofta and fried potatoes to the pot and keep on medium heat for about 15 minutes. Lower the heat and allow to simmer for ten minutes. Serve.
Breaded kofta
Ingredients:
1 medium onion
1/2 kilo ground meat
1 tablespoon minced parsley
3 eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon meat spices
1 cup soft bread crumbs
1/2 cup ghee (clarified butter)
1/2 cup frying oil
Preparation:
Mince the onion and add it to the meat, along with minced parsley and beaten eggs. Season the mixture with salt pepper and mix well. Leave to fry in oil until.
Shape the kufta in circular disks, compressing them with your palms. Dip them them in the beaten eggs with a little black pepper added to them. Roll the disks in bread crumbs. Fry in oil or ghee and serve garnished with parsley.
Charcoal grilled kofta:
Ingredients:
1 medium onion
1/2 kilo ground beef
1/4 kilo ground mutton
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon meat spice
One tablespoon minced parsley
Preparation:
Mince the onion and squeeze out some of the moisture. Add onion to the ground beef and mutton. Season with salt, pepper, and minced parsley, and mix well. Leave it to marinate for at least an hour. Roll the kofta around the a metal skewer and press until it holds. Sprinkle it with little oil, using a brush and put it in the grill. Garnish with parsley and serve.
