Ingredients: 2 loaves dry baladi (pita) bread 2 tablespoons ghee 2 cups yellow lentil soup 4 garlic cloves 2 tablespoons vinegar 1/4 teaspoon black pepper Instructions: 1) Fry small pieces of bread in ghee. Add lentil soup and leave to steep. 2) Fry small pieces of garlic in ghee until it turns yellow. Add vinegar and sprinkle over fatta. Add black pepper. Yellow Lentil Soup Ingredients: 1/2 kg yellow lentils 1 liter water 1 teaspoon salt 1 large onion 1 tablespoon corn oil 1 cup water 1 teaspoon cumin Instructions: 1) Wash lentils well, cover with water, add a little salt and leave to boil over low heat for 1/2 hour. Remove the rim regularly. 2) Remove from stove and put in sieve or mix in electric mixer. 3) Cut onion cubes and fry them in oil until they turn yellow. Add lentils and one cup water. Leave to boil for 10 minutes. Add teaspoon of cumin. Vegetative Beans Fatta Ingredients: 1/2 kg vegetative beans 2 loaves dry baladi (pita) bread 1 tablespoon ghee 1 large onion 2 tomatoes 2 tablespoons corn oil 2 squeezed lemons 1 teaspoon salt 1/4 teaspoon black pepper Instructions: 1) Peel beans and boil in usual manner. 2) Fry small pieces of bread in ghee, place in deep pot and add one cup beans soup. Leave briefly to steep. 3) Chop onion and tomatoes, cover bread with beans, then onions and tomatoes. 4) Mix oil with lemon, salt and pepper, and pour over fatta. Vegetative Beans Germination of beans: 1) Wash 1 kilo good quality white beans, cover with water and leave for 24 hours. Change water twice without moving container by opening water tap directly over it. 2) Remove water and cover beans with wet towel. Let sit for 12 hours without water. Vegetative Beans Soup Ingredients: 1 tablespoon corn oil 3 cloves mastic 1 small onion 2 liters water 1/2 kg vegetative beans 1 teaspoon salt 1/4 teaspoon black pepper 1 teaspoon cumin Instructions: 1) Fry mastic and whole onion in oil until it turns yellow. Add water and leave to boil. 2) Add beans, salt, pepper and cumin and leave to boil for 1/2 hour. 3) Peel outer shell of beans and use soup to make fatta.
