Sufra Dayma: Lamb Kebabs By Moushira Abdel-Malek Serves 4 Ingredients: 4 large lamb steaks (cubed chunks) 1/2 tsp crushed garlic 1 tbsp onion juice 1 tbsp lemon juice 1/2 red cabbage (finely shredded) 1/2 onion (finely sliced) 4 pitta bread loaves 1 tbsp olive oil Salt + pepper + ground cumin + chilli powder Method: Toss the lamb with garlic, onion and lemon juices, seasoning and olive oil. Refrigerate for at least 2 hours. Thread the lamb on to skewers and grill or chargrill for 4-5 minutes each side. Mix the cabbage and onion. Warm the pittas, split and fill with cabbage mix.
