Sufra Dayma: Greek Salad By Moushira Abdel-Malek Serves 4 Ingredients: 250 gms good quality firm feta cheese (cubed) 2 green capsicums (seeded, diced) 4 tomatoes (cut into wedges) 4 cucumbers (cubed) 1 onion (finely sliced) 2 tbsp lemon juice 1 clove garlic (crushed) 16 Kalamata olives (pitted, halved) 3 tbsp parsley leaves (chopped) 2 tbsp fresh mint leaves (chopped) 1/4 cup extra virgin olive oil Salt (to taste) Method: Place the tomato, cucumber, capsicum, onion, olives, feta, parsley and mint in a large salad bowl. Gently mix together. Place the oil, juice, garlic and salt in a screw top jar. Shake well until combined. Pour the dressing over the salad and toss lightly. Serve as a side salad or as a dish with bread.
