Sufra Dayma: Egg and Vegetable Mix By Moushira Abdel-Malek Ingredients : 750 gms tomatoes (skinned and chopped) 1 large onion (sliced) 4 green peppers (cored, seeded and sliced) 1 clove garlic (crushed) 4 eggs (beaten) 4 smoked cold cut rashers 1 bunch torn basil 1 tbsp olive oil Salt + Pepper Method: Heat the oil in a frying pan. Add the onion and fry only until softened. Add the green peppers, garlic, tomatoes and season to taste. Cook until tomatoes are pulpy. Add the basil and stir. Add the cold cuts, stirring for a few seconds. Add the eggs and stir until just scrambled. Remove from heat and serve immediately with crusty bread and Feta cheese.
