Sufra Dayma: Warm Salmon Salad By Moushira Abdel-Malek Serves 4 Ingredients: 400 gms potatoes (washed, scrubbed, cut into 1 cm cubes) 3 garlic cloves (crushed) 100 gms smoked salmon slices (chopped) 1 onion (thinly sliced) 1/4 cup sun-dried tomatoes 1 tsp brown sugar 1/2 horseradish cream 2 tbsp sour cream Lettuce (torn) 1 1/2 tbsp olive oil Salt + pepper + basil (dried) Method: Preheat oven to 200 degrees. Place potatoes into a bowl with garlic, 1 tbsp of oil, salt, pepper and basil. Toss to coat. Spread potatoes over baking tray, in one layer. Roast until tender. Cover and set aside. Meanwhile, heat remaining oil in a frying pan over medium heat. Add onion. Cook for 5 minutes. Add sugar. Cook until caramelised. Remove to a plate. Cover to keep warm. Whisk horseradish cream and sour cream together. Combine lettuce, potatoes, onion, salmon, tomatoes and horseradish dressing in a bowl. Toss gently to combine. Serve.
