Sufra Dayma: Smoked Salmon and Brie Mini Quiches By Moushira Abdel-Malek Makes 12 Ingredients: 12 sheets ready rolled shortcrust pastry (almost thawed) 1 onion (thinly sliced) 200 gms smoked salmon (torn) 125 gms brie (sliced) 1/4 cup grated parmesan cheese 2 tbsp finely chopped parsley leaves 1 cup(1/2 milk and 1/2 cream). 2 eggs 30 gms butter Salt + pepper + dried seasoning (to taste) Method: Cut pastry into 10 cm. rounds. Ease into greased muffin tins. Melt butter in a frying pan. Sautée onion until about to brown. Spoon evenly into each pastry case. Top with an even amount of salmon, brie, parmesan and parsley. Pour combined remaining seasoned ingredients into each recess. Bake in a moderate preheated oven (180 degrees), until firm to touch; (approx. 25 - 30 minutes). Remove after10 minutes and serve.
