Sufra Dayma: Strawberry Crumble Cheesecake By Moushira Abdel-Malek Serves 8 Ingredients: 375 gms plain sweet biscuits 250 gms cream cheese 3/4 cup sweetened condensed milk 2 eggs + vanilla extract 1/2 cup cream 1/4 cup plain flour 200 gms fresh strawberries (hulled and quartered) 125 gms butter (melted) 60 gms butter, melted (extra) Method: Crush three quarters of the quantity of biscuits. Combine with the melted 125 gms butter and mix well. Press crumb mixture over base and sides of a 20 cm spring- form pan. Refrigerate until required. Place cream cheese and condensed milk in a large bowl. Beat well with an electric mixer until smooth. Beat in eggs, cream and flour. Gently fold in strawberries using a metal spoon. Spoon filling onto refrigerated crumb crust. Roughly crush remaining biscuits. Combine with extra melted butter. Sprinkle over top of cheesecake. Place cheesecake on oven tray and bake in a preheated moderate oven of 180 degrees, for 45-50 minutes or until set. Allow to cool. Refrigerate until cold, before slicing and serving.
