Sufra Dayma: Carrot, Almond and Orange Cake By Moushira Abdel-Malek Serves 10 Ingredients: 1 1/2 cups plain flour 3/4 cup castor sugar 2 eggs + vanilla extract 320 gms carrots (about 2), peeled, coarsely grated 110 gms almond meal 3 tsp baking powder 1 orange, unpeeled, coarsely chopped, deseeded 50 gms butter (melted) Melted butter to grease lightly Double cream or whipped (to serve), optional Method: Preheat oven to 180 degrees. Brush a round 22 cm base cake pan, with melted butter to lightly grease. Process the orange in a food processor until finely chopped. Add the butter, sugar and eggs. Process until well combined. Add the carrot, flour, almond meal and baking powder. Process to combine. Pour the mixture into prepared pan. Top with flaked almonds. Bake for one hour and ten minutes approximately, or until a skewer inserted in the centre comes out clean. Set aside to cool completely. Cut into wedges and serve with cream.
