Sufra Dayma: Christmas Walnut and Chocolate Pudding By Moushira Abdel-Malek Serves 6 Ingredients: 150 gms dark chocolate (broken into squares) 1 cup castor sugar + some castor sugar to coat 3/4 cup self-raising flour 1/3 cup milk (warmed) 4 eggs (at room temp.) 1 tsp vanilla extract 1/3 cup walnuts (coarsely chopped) Flaked almonds (toasted, to garnish) Icing sugar (to dust) Vanilla ice-cream (to serve with) 125 gms butter (chopped, at room temp.) + extra to coat Method: Preheat oven to 200 degrees. Coat with butter either 6 x 1 cup deep oven-proof pudding ramekins (or) one 6-cup dish. Sprinkle inside surface with sugar to lightly coat. Discard excess. Place prepared dish (es) on a baking tray. Place butter and chocolate in a small pan, over low heat. Stir until melted and smooth. Cool slightly, then stir in milk until combined. With an electric mixer, beat eggs and cup of sugar in a medium-large bowl until creamy and pale. Sift flour over egg mixture. Fold until just combined. Fold in the chocolate mixture and walnuts until combined. Spoon equally into prepared dish (or) dishes. Bake for 20-25 minutes, or until firm to touch. Place on small, (or) large serving plate(s). Dust with icing sugar. Top with ice-cream and flaked almonds. Serve at once, and Have a Very Merry Christmas!
