Sufra Dayma: Savoury Cheese Scones By Moushira Abdel-Malek Makes approx. 25-30 Ingredients: 3 cups plain all-purpose flour 1 tsp salt 3/4 tsp baking powder egg egg (extra) 3/4 cup cheese (your choice- for filling) 1/2 cup butter or ghee Pinch of pepper Method: Sieve flour, salt, baking powder, combined in a large bowl. In a small saucepan, heat butter or ghee until very hot, then add hot to flour and combine to form a dough-like mixture. Add the egg and knead again to combine well and integrate in mixture. Place in room temperature, covered, for one hour to set. Form into egg-sized balls. Pierce each ball with your thumb, swirling to flatten slightly all around. Fill with desired amount of cheese. Secure over filling and place upon a slightly greased baking tray. Leave to set in baking trays for an extra 15 minutes. Beat extra egg with pinch of pepper and brush on top of each scone. Bake in a preheated oven of 180 degrees until top is slightly golden. Serve warm or at room temperature.
