Sufra Dayma:
Savoury Olive Cake

Makes approx. 12 slices
Ingredients:
1 cup all-purpose flour
1 tsp baking powder
1 pinch of salt
3 eggs + 1 pinch black pepper
1/3 cup grated cheddar cheese
1/3 cup pitted black olives (each one chopped into 8 pieces)
1 tsp dry basil (or) thyme (or) oregano
100 gms butter
Methods:
In a large bowl, add flour, salt, pepper and baking powder. Mix and make a well in the centre. In another bowl beat eggs with pinch of pepper. Add melted room temperature butter. Beat until creamy, then mix well with eggs. Add butter and egg mixture into well. Add cheese, olives and your choice of herbs. Mix gently with batter by means of a hand spatula. Pour immediately into a lightly greased and floured loaf tin. Bake in a preheated oven of 180 degrees, approx 40 minutes.
