Sufra Dayma: Mini-Cheese Cornbread Rolls By Moushira Abdel-Malek Makes 24 Ingredients: 3/4 cup self-raising flour 1/4 corn flour 1/2 cup milk 3/4 cup grated tasty yellow cheese 1/4 cup grated parmesan cheese 1 egg 60 gms melted butter Salt + pepper + dried herbs to your taste;(basil, rosemary, thyme, oregano) etc. Method: Sift flour into a large bowl, mixing well to combine. Stir in tasty cheese. Whisk egg, milk and butter together in a jug. Make a well in the flour mixture. Pour in egg mixture. Stir with a wooden spoon, until just combined. Blend through seasoning. Spoon mixture into lightly greased muffin tins. Sprinkle each with a pinch of parmesan. Bake in a preheated moderate oven at 180 degrees, for approx. 20-25 minutes, or until cooked when tested. Allow to slightly cool off in tin before removing. Serve warm or at room temperature.
