Sufra Dayma: Fruit and Nut Muffins By Moushira Abdel-Malek Ingredients: 2 cups plain flour 1 3/4 tsp baking powder 1/4 tsp sodium bicarbonate 1/4 cup pecans or walnuts (chopped) 1/2 cup unsweetened, cooked and puréed apples 1/2 cup dried apricots (coarsely chopped) 2 eggs 1/4 cup white sugar 1/4 cup brown sugar 3/4 tsp cinnamon powder 3/4 tsp ginger powder Vanilla Pinch of salt 2 tbsp corn or sunflower oil Method: Preheat oven to 190 degrees. Grease and lightly flour a 12- cup non-stick tray. Lightly toast nuts for 5 minutes. Chop after cooling. Combine all dry ingredients after sieving flour. Place in a large bowl. Combine eggs, sugar, oil and vanilla by an electric mixer. Add nuts, apple and apricots. Pour mix into a well at the centre of flour mix. Stir until all ingredients are moistened and well combined. Scoop mix equally into cups. Bake for 30 minutes or until skewer inserted into centre comes out clean.
