Sufra Dayma: Carrot and Zucchini Cake By Moushira Abdel-Malek Serves 12 Ingredients: 1 cup self raising flour 1/2 cup plain all purpose flour 1 tsp bicarbonate of soda 1 tsp cinnamon 1/2 cup brown sugar 1/2 cup milk 1 cup grated zucchini 1 cup grated carrot 1/3 cup raisins or sultanas 1/4 cup chopped walnuts 1 egg + vanilla essence 1/4 cup oil Icing: 125 gms cream cheese 3/4 icing sugar 1 tsp lemon juice Method: Place zucchini, carrot, sultanas, walnuts, bicarb. of soda and cinnamon in a bowl. Add remaining ingredients. Combine and mix well. Place in two greased 7 X 25 cm. pans. Bake at preheated 180 degree oven, for 45-50 minutes. Combine all icing ingredients thoroughly. Top over cakes generously with a spatula, after cooled at room temperature. Slice and serve.
