Sufra Dayma: Sesame Svoury Biscuits By Moushira Abdel-Malek Makes about 40 Ingredients: 2 cups plain flour 2 tsp baking powder _ tsp salt 1 cup grated yellow tasty cheese 1-2 tbsp lemon juice 2 egg yolks 1 egg white (lightly beaten) _ tsp black pepper 125 gms butter Sesame seeds Method: Sift flour, baking powder, salt and pepper into a bowl. Rub in butter with fingertips. Add grated cheese and mix well. Beat egg yolks with one tablespoonful lemon juice. Mix into dry ingredients, adding extra lemon juice if necessary to form a firm dough. Shape dough into a ball. Cover with plastic film and chill for one hour. Turn onto a floured surface and knead lightly. Roll out thinly and cut into small rounds with a fluted cutter. Place on lightly greased baking trays. Allow room for spreading. Brush with egg white and dust with sesame seeds. Bake at preheated 190 degree oven for 10-12 minutes or until goldened. Loosen on the trays and cool for 2-3 minutes. Transfer to a wire rack to cool completely. Store in an airtight jar.
