Sufra Dayma: Crab Meat Gratin de Bonne Femme By Moushira Abdel-Malek Serves 4 Ingredients: 500 gms crab meat (cooked) 1 onion (finely chopped) 1 tbsp garlic butter with parsley 3 heaped tbsp flour 1 litre whole milk 3 heaped tbsp grated Gruyére 3 heaped tbsp grated Parmesan + 2 tbsp extra 1 stalk of leek (sliced with green leaves) 2 medium carrots (grated) Butter + oil Salt + pepper + grated nutmeg To prepare Garlic Butter: Mix together: 2 tbsp softened butter 1 tsp crushed garlic 1 tsp finely chopped parsley leaves Salt Method: In a large cooking pan, heat some oil and butter. Add onion. Stir only until translucent. Add leek, then carrot. Add seasoning. Add flour. Stir until changes colour. Add milk away from heat. Stir over heat until thickened. Add garlic butter and crab meat. Add Gruyére and Parmesan away from heat. Stir in to combine. Pour into an oven-proof dish. Sprinkle extra Parmesan on top and bake in preheated oven of 200 degrees until top is golden. Serve with boiled pasta.
