Sufra Dayma: Spicy Beef Nachos By Moushira Abdel-Malek Serves 6 Ingredients: 250 gms natural corn chips 500 gms beef (minced) 1 onion (finely chopped) 2 cloves garlic (finely chopped) 400 gms kidney beans (canned) 300 gm jar salsa dip 2 cups grated tasty yellow cheese 1 avocado (diced) 1 tbsp chopped parsley leaves 1 tbsp oil + butter Salt + pepper + allspice + thyme Method: Heat oil and butter in a frying pan. Sauté onion and garlic until tender. Add minced meat. Brown well over high heat, breaking up with a spoon as it cooks. Add beans after draining them. Season and add salsa. Simmer for 10 minutes. Arrange corn chips in a heat- proof platter. Top with mince mixture, then cheese. Place under a hot grill for 2-4 minutes or until cheese has melted. Top with avocado and parsley before serving.
