Sufra Dayma: Pasta with Salami and Chives By Moushira Abdel-Malek Serves 4 Ingredients: 500 gms hot cooked pasta 200 gms sliced salami (chopped) 1 onion (finely sliced) 2 cloves garlic (finely sliced) 1/2 cup white wine or stock 1/2 cup sour cream 1 egg (beaten) 100 gms grated parmesan cheese 4 tbsp snipped chives 1 tbsp oil + 1 tsp butter Salt + pepper Method: Heat oil and butter in a frying pan. Sauté onion and garlic until onion is tender. Add salami. Cook stirring for one minute. Pour in wine or stock. Simmer until reduced by half. Stir in cream and egg. Cook stirring for one minute. Toss sauce through pasta. Pour into serving dish. Sprinkle with parmesan and chives. Serve immediately with a green salad. Variation: Use any cold cuts you desire instead of salami.
