Sufra Dayma: Winter Vegetable Soup By Moushira Abdel-Malek Serves 4 Ingredients: 1 large onion (chopped) 2 cloves garlic (sliced) 1 or 2 leeks (sliced) 2 medium carrots (sliced) 2 celery sticks (sliced) 200 gms button mushrooms (chopped) 50 gms spaghettini (or any fine pasta) 6 cups vegetable, chicken or beef stock 1 tbsp finely chopped parsley leaves 2 tbsp oil Salt + pepper Method: Heat oil in large pan. Cook onion and garlic until onion is soft. Add leak, carrot and celery. Cook, stirring, until vegetables are soft. Add mushrooms, cook, stirring one minute. Add stock to pan. Bring to boil, simmer uncovered, for 15 minutes. Add pasta; cook uncovered, until just tender. Season to taste. Stir parsley into soup. Remove from heat and serve immediately.
