Sufra Dayma: Haloumi, Vegetable and Rocket Salad By Moushira Abdel-Malek Serves 4 Ingredients: 250 gms haloumi cheese (cubed) 180 gms button mushrooms (halved) 1 red + 1 yellow capsicum (coarsely chopped) 180 gms eggplant (coarsely chopped) 300 gms zucchini (thickly sliced) 150 gms rocket leaves 1/2 tsp crushed garlic 2 tbsp balsamic vinegar 2 tbsp extra virgin olive oil Salt + pepper Method: Heat a grill plate (a grill or barbecue). Lightly brush cheese and vegetables with oil. Grill them in batches until slightly browned and just tender. Meanwhile, place oil vinegar, garlic and seasoning in a screw-top jar. Shake well to combine. Mix cheese and vegetables in a large bowl. Add rocket and dressing. Toss gently to combine and serve.
