Sufra Dayma: Paella By Moushira Abdel-Malek Ingredients: 2 cups Basmati rice 1 large onion (thinly sliced) 3 large bell peppers (green + red + yellow) -- (chopped) 3 large tomatoes (coarsely chopped) 200 gms peas (boiled-half done) 200 gms fish fillets (cubed) 200 gms shrimps (deveined and shelled) 200 gms mussels (whole) 200 gms chicken fillets (cubed) Salt + pepper + allspice + grated nutmeg + a pinch of saffron dissolved in some hot water Oil Method: In a large cooking pan, fry the onion in some oil only until yellowish. Add the remaining ingredients except the rice and saffron, one by one, stirring each for a few moments. Cover, simmer over low heat to cook only until half done. Add washed rice, enough quantity of water and the dissolved saffron. Stir all ingredients, bring to the boil, cover and simmer over a simmering ring until rice is done, stirring occasionally. Serve hot with a green salad with spring onions.
