It's Sunday, so why not go crazy for sweetness. This apple crisp recipe is the perfect afternoon snack, or a great dessert following a hearty dinner. Enjoy! Ingredients: Filling: 6 cups apples, peeled and thinly sliced 1/3 cup light brown sugar 1/3 cup 100% apple juice (Santa Cruz brand is good) 2-3 tablespoons all-purpose flour 1-2 teaspoons cinnamon Topping: 1 1/2 cups oats (quick or old-fashioned) 3/4 cup light brown sugar 1/3 cup margarine/butter 2-3 tablespoons plain nondairy milk (I use soy) 3 tablespoons all-purpose flour Preparation: Preheat oven to 350 degrees F. Combine filling ingredients and stir until all the apples are coated. Pour into a 9″ glass baking dish. Combine topping ingredients until blended. (You may need to use 1 tablespoon more milk if it's too dry, but it should be crumbly.) Sprinkle evenly on top of apple mixture. Bake for 30-40 minutes or until topping is crispy and apples are tender. TIP: Goes great with vegan ice cream! BM
