Kid friendly snack of the week: Savory baked turnovers

Sambousak, turnovers and samosas all have something in common: fabulous puff pastry and usually, deep frying. This kid friendly recipe may include the puff pastry but no frying is involved.
Using enough puff pastry, this lunch box snack can replace your child's main course. Get creative with the filling!
Ingredients:
2 tablespoons olive oil
1 medium onion, finely chopped
1 red bell pepper, finely chopped
2 tablespoons minced fresh parsley
1 tablespoon tomato paste
1/4 kilo ground beef
1/2 cup mild chedder, shredded
2 tablespoons sour cream
1 large egg white, lightly beaten
Puff pastry shells
1 tablespoon water
Directions:
1. Heat oil over medium heat and cook ground beef till brown (sprinkle with pepper and salt).
2. Add onion, bell pepper, parsley and tomato paste and cook until onions are transparent.
3. Remove from heat and transfer mixture to a bowl to cool.
4. Add cheese and sour cream to mixture in bowl and mix well.
5. Roll out puff pastry shell into a 20cm circle on a lightly floured work surface.
6. Place two heaped tablespoons of filling in the center of the circle.
7. Fold pastry in half and press edges firmly to seal.
8. Crimp edges with a fork dipped in flour and pierce the top with the fork to allow the steam to escape.
9. Refridgerate your little pastries for 30 minutes.
10. Heat oven to 375 degrees and brush pastry with beaten egg whites.
11. Place them on a baking sheet lined with parchment paper (wax paper) and put them in the oven.
12. After 10 minutes of baking, turn them over for another 15 minutes.
13. Allow to cool and then place them in your child's lunch box!
Start early tip: Prepare and freeze the pastries over night (rather than refrigerating)--once you wake up, place them in the oven nad increase baking time by 7 minutes on each side (15 minutes all together).
