Sufra dayma: Spicy Chicken with Garlic and Spring Onion Serves 2 Ingredients: 350 gms chicken breast (cubed) 5-6 garlic cloves (crushed) 2 spring onions (cut into sections, with green leaves) 3 tbsp sesame oil Marinade 2 tbsp dry white wine 1 tbsp soy sauce 1 tsp honey 1 tsp cornstarch dissolved in 1 tbsp water Salt + pepper + 2 tsp allspice 1 tsp sesame oil Method: Combine chicken pieces with marinade in a glass bowl. Stir to coat well. Cover and refrigerate for at least 2 hours. Drain from marinade, reserving all the liquid. Heat the sesame oil in a wok over high heat. When hot, add the garlic and chicken. Stir-fry for 3-5 minutes then add the reserved marinade and spring onions. Cook until chicken is well done (10-15 minutes).
