Sufra Dayma: Date and Nut Slice By Moushira Abdel-Malek Ingredients: 1 1/4 cups self-raising flour 2 eggs + vanilla 1/2 cup sugar 1 tbsp. water 185 gms. dates 3/4 cup walnut pieces 15 gms. butter Lemon Icing: 3 cups icing sugar 4 tbsp. lemon juice 15 gms. butter Method: Beat together eggs and sugar until thick and mousse-like. Combine melted butter and water. Add to egg mixture. Add vanilla and beat further one minute. Stir in sifted flour, roughly chopped walnuts and dates. Spoon mixture into greased and greased paper lined 28 cm x 18 cm lamington tin (or only greased if teflon). Bake in moderate oven 25 to 30 minutes or until golden browned on top and cooked through when tested with a skewer. When cool, top with lemon icing. Allow icing to set before slicing. Lemon Icing: Sift icing sugar into bowl. Add softened butter and lemon juice. Beat until mixture is smooth.
