Sufra Dayma: Lemon Banana Cakes By Moushira Abdel-Malek Makes 12 Ingredients: 2 cups self-raising flour (sifted + 1 tsp. salt) 1/4 cup whole milk 2 bananas (mashed) 2 eggs 1 tsp lemon juice 3/4 cup sugar 125 gms butter Icing: 2 cups icing sugar 1 tsp butter 1/2 tsp lemon juice 1-2 tbsp warm water Method: Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in bananas. Gently fold in flour into creamed mixture, alternately with milk, until well combined. If required add more liquid to the mixture to achieve a 'dropping' consistency. Blend in lemon juice. Spoon mixture into lightly greased and floured muffin tins until 3/4 full. Bake in a preheated moderate oven of 180 degrees for 15-20 minutes, or until cooked and goldened. Transfer to a wire rack to cool completely. To prepare Icing: Place icing sugar and butter in a bowl. Beat in sufficient water and lemon juice to form a spreadable consistency. Spread over cold cakes. Decorate with coloured sprinkles, if desired.
