Sufra Dayma: Cinnamon Biscuits By Moushira Abdel-Malek Ingredients: 21/2 cups plain flour 1/4 cup castor sugar 1/3 cup golden syrup 1 egg 1 tsp ground cinnamon 1/4 tsp bicarbonate of soda 125 gms butter (at room temperature) Method: Using an electric mixer, cream butter, sugar and golden syrup in a bowl until light and creamy. Add egg and beat well. Add flour, cinnamon and bicarbonate of soda to butter mixture. Mix well. Turn onto a lightly floured surface. Knead for one minute, adding a little extra flour if dough is sticky. Divide dough into three portions. Pat each portion into an 8cm disc. Wrap individually in greaseproof paper. Refrigerate until firm. Preheat oven to 180 degrees centigrade. Line baking trays with baking paper. Roll out one piece of dough between two sheets of baking paper to 4mm thick. Repeat with remaining dough. Use cookie cutters to cut shapes from dough (e.g. stars, smiling faces etc.) and place onto trays. Use a straw to make a small hole in the top of each biscuit. Bake for 12- 15 minutes. Cool on trays for five minutes before transferring to wire rack. Thread narrow ribbon or golden string through holes in biscuits.
