Sufra Dayma: Chocolate Chip Cake By Moushira Abdel-Malek Serves 8 Ingredients: 1 1/3 cups plain white flour 1 1/2 tsp baking powder 1 tsp bicarbonate of soda 1 tsp ground cinnamon 1/2 tsp salt 1 cup castor sugar + 1 tbsp (extra) 2 eggs 1 tsp vanilla extract 300 gms sour cream 250 gms choc bits 125 gms butter (softened) Icing sugar (to serve) Method: Preheat oven to 180 degrees. Grease and line a 6 cm deep, 19 cm square cake pan. With an electric mixer, beat butter and castor sugar until creamy. Beat in eggs, one at a time with vanilla. Stir in sour cream. Sift flour, baking powder, bicarbonate of soda, salt and cinnamon over mixture. Fold in until just combined. Spread two-thirds of batter over base of prepared pan. Sprinkle with half the choc bits. Top with remaining cake batter and choc bits. Sprinkle top with extra sugar. Bake for 45 minutes or until a skewer inserted into the centre comes out clean. Allow to cool in pan. Dust with icing sugar and serve warm or cold.
