Sufra Dayma: Teatime Scones By Moushira Abdel-Malek Ingredients: 250 gms self-raising flour 1/2 tsp baking powder 2 tbsp castor sugar 75 gms raisins 150 ml (approx.) whole milk 50 gms butter Pinch of salt Method: Sift the flour, baking powder and salt into a bowl. Rub in the butter until it resembles breadcrumbs, then stir in the sugar and raisins. Add enough milk to give a fairly soft non-sticky dough. Turn onto a lightly floured surface. Knead very gently then roll out to a 2 cm. thickness. Cut into 5 cm. rounds and place on a lightly floured baking sheet, or a non- stick baking tray. Brush with milk and bake in a preheated hot oven of 220 degrees; (approx. 15 minutes). Cool on a wire rack. Cut in half and spread with butter and jam to serve.
