Sufra Dayma: Lancshire cookies By Moushira Abdel-Malek Ingredients: 2 tbsp plain flour 2 tbsp rice flour 2 tbsp castor sugar 1/4 tsp baking powder 1 whole egg Vanilla Jam to paste (your choice) Chocolate granules (or) finely crushed pistachios 60 gms butter Method: Beat sugar and butter until creamy and sugar is dissolved. Add egg and vanilla. Beat well to combine into a creamy mixture. Combine 2 kinds of flour with baking powder. Sift over mixture and fold in to integrate into mixture. Cover with a tea towel in a warm place for one hour. form into marble-sized balls. Place on a greased baking tray. Bake in a preheated oven of 170 degrees only until slightly goldened. Remove from oven and allow to cool on tray. Take 2 cookies and paste them together with the jam, then roll the inner edges over the chocolate or the crushed nuts. Repeat until quantity is finished. Place on serving bowl or plate and serve. N.B.: Ingredients can be multiplied according to quantity required.
