Sufra Dayma: Moist Fruit Cake By Moushira Abdel-Malek Makes one 23cm round cake Ingredients: 150 gms plain flour 150 gms self-raising flour 1/2 tsp bicarbonate of soda 3 eggs + 1 tsp vanilla (beaten) 250 gms soft brown sugar 250 ml water 175 gms each: raisins + sultanas + currants 50 gms each: glacé cherries (chopped) + mixed peel + walnuts (chopped) 1/2 tsp each: ground cinnamon + ground ginger 175 gms butter Method: Put raisins, sultanas, currants, sugar, spices and butter into a saucepan with the water. Bring to the boil, stirring. Simmer for 3 minutes, then leave to cool. When cold, stir in the eggs. Sift the flours and bicarbonate of soda into a mixing bowl and stir in the cherries, peel and nuts. Stir in the fruit and egg mixture until thoroughly mixed, then turn into greased cake tin. Bake in a preheated moderate oven at 160 degrees for approx. 1 1/2 hours. Turn out and cool on a wire rack.
