Sufra dayma: Quick Onion and Tomato Soup By Moushira Abdel-Malek Serves 4 Ingredients: 2 onions (sliced) 2 tomatoes (chopped) 1 potato (peeled and chopped) 1 tbsp tomato paste 3 cloves garlic (crushed) 1/2 French bread (broken into chunks) 1/2 cup grated yellow cheese 2 tbsp cream Salt + pepper (to taste) Method: Combine stock, onions, tomatoes, potato, paste and garlic in a large saucepan. Bring to the boil. Reduce heat. Simmer for 20 minutes or until potatoes are very tender. Purée with a food processor, blender, or hand blender. Reheat and season to taste. Add cream stirring until it starts to boil. Serve over chunky bread and a generous sprinkling of cheese. N.B.: If soup is too thick after blending, you may add more stock to get your desired consistency. To complete your Ramadan meal, serve with baked "torli" in tomato sauce, with veal chunks, rice, a green salad, and "khoshaf" for dessert.
