Sufra Dayma: Ginger Date Chocolate Slice By Moushira Abdel-Malek Makes 16 Ingredients 1 cup chopped pitted dates 3 cups cornflakes (crushed) 100 gms good quality dark chocolate 60 gms glacé ginger (finely chopped) 1/3 cup castor sugar 125 gms butter (chopped) 30 gms butter extra Method: Lightly grease a three cm. deep, 26 cm. (base) lamington pan. Combine butter, sugar, dates and ginger in a small saucepan over medium heat. Cook, stirring, until butter has melted and dates are soft. Transfer to a bowl. Add cornflakes. Mix well. Press into prepared pan. Cover and refrigerate for one hour, or until firm. Place chocolate and extra butter into a heat- proof bowl over a saucepan of simmering water. Cook, stirring with a metal spoon, until melted. Spread over slice. Allow to set before cutting into squares to serve.
