Serves 4 - 6 Ingredients: 1/2 kg fish fillets (largely cubed) 1/2 kg cooked shrimps (peeled, tails intact) 1 onion (finely chopped) 1 tsp crushed garlic 250 gm frozen peas 1 bunch dill leaves (chopped) 1 cup basmati rice 2 cups hot water Juice of one lemon 2 tbsp olive oil Salt + pepper + sweet paprika Method: Wash rice well and soak in hot water for ten minutes. Rinse well and drain. Heat a large cooking pan. Add oil. Add onion and stir until translucent. Add seasoning. Stir until fragrant. Stir in garlic. Add fish and shrimps in batches, stirring gently only to change colour. Add peas, lemon juice and water. Cover and bring to a boil over medium heat. Add rice, stirring it in then lower heat. Allow to cook over a simmering ring until rice is done, stirring mixture once, gently, while cooking, to fluff rice. Remove from heat and stir in dill leaves. Allow to rest for a few minutes then serve with a green salad.
