Serves 4 Ingredients: 500 gms beef steak (thinly sliced into strips) 500 gms mixed stir fry vegetables (fresh or frozen) 4 - 5 spring onions (thickly sliced with greens) 4 garlic cloves (thinly sliced) 1/2 cup salted peanuts (chopped) 1/4 cup oyster sauce Juice of 2 lemons 1 tbsp brown sugar Salt + black pepper (cracked) 2 tbsp extra virgin olive oil Method: Heat an empty large wok for a whole minute. Add half quantity of oil and stir-fry, beef strips, immediately, in batches, to brown. Remove onto a plate and cover. Add remaining oil to wok along with spring onions. Stir for 1 to 2 minutes, then add garlic. Stir it in only for a moment, then add vegetables. Stir-fry for 5 minutes. Return beef to wok, along with seasoning, brown sugar, oyster sauce and lemon juice. Stir in peanuts. Cook, stirring gently for a further couple of minutes. Serve immediately with steamed rice.
