Sufra Dayma: Chinese Beef Stir-Fry By Moushira Abdel-Malek Serves 4 Ingredients: 500 gms beef steak (lean, cut into thin strips) 1 each medium green and red bell pepper (cut into strips) 1 cup each: carrot, celery heads, mushrooms, spring onions (thinly sliced) 2 cups bean sprouts 4 garlic cloves (sliced) 1 tsp grated orange rind ½ cup orange juice (fresh) 1 tbsp grated fresh ginger 150 ml soy sauce 4 tbsp sesame oil Black pepper Method: In a small bowl, combine soy sauce, orange juice, ginger, garlic, orange rind and black pepper. Whisk to mix well. In a wok, heat oil over high heat. Add beef and stir-fry until slightly browned; (about 4 minutes). Remove on a plate with a slotted spatula. Add bell pepper, carrot, celery, spring onions and mushrooms to wok. Stir-fry for a couple of minutes or until vegetables are tender-crisp. Stir in beef strips. Add bean sprouts. Stir-fry for another couple of minutes. Add soy sauce mixture, stir to mix all well, then place on warm serving dish. Serve with Chinese rice or noodles
