Sufra Dayma: Asian Beef Fried Rice By Moushira Abdel-Malek Serves 4 Ingredients: 200 gms beef strips 4 spring onions (finely sliced) 1 cup broccoli florets (steamed) 425 gms canned baby corn cuts (drained) 250 gms fresh bean sprouts 3 cups cold steamed rice 2 eggs beaten (with a dash of pepper) 1 tsp sugar 3 tbsp light soy sauce 3 tbsp fish sauce 1 tsp sesame oil 3 tbsp corn oil Method: Place beef in a large bowl. Add sugar and one tablespoonful of soy sauce. Stir to combine. Heat one tablespoonful of corn oil in a wok, over high heat. Add eggs and swirl to coat base of wok. Cook for one to two minutes or until egg is just cooked through. Remove to a plate. Allow to cool. Slice into thin strips. Heat one tablespoonful of corn oil in wok. Add beef mixture and onions. Stir fry for two minutes. Add remaining oil, remaining soy sauce and rice to wok. Stir fry for a couple of minutes or until rice is heated through. Add fish sauce, sliced egg and sesame oil. Stir to combine and serve.
