A great way to start the day. Who doesn't like a little fruit in their muffins? We know we do and this is a tried and tested recipe that will get the day moving forward with fun and flavor. Enjoy! Ingredients: Muffins: 3/4 cup flour 3/4 cup whole wheat flour 2 teaspoons baking powder 3/4 cup sugar (1/2 cup stevia) 1/2 teaspoon salt 1/3 cup nondairy milk 1/3 cup vegetable oil 3 tablespoons applesauce 1 cup fresh strawberries, chopped Topping: 1/4 cup sugar 1/8 cup flour 2 tablespoons vegan butter 1 teaspoon cinnamon Preparation: Preheat oven to 350 degrees F and grease a large muffin pan. Combine flours, baking powder, sugar, and salt in a large bowl. Make a well in the center and add the milk, oil, and applesauce. Fold in the strawberries. For the topping, combine all ingredients and melt in microwave for 15 seconds. Fill prepared tin 3/4 full. Drop a spoonful of topping on each muffin. Bake for 25 minutes. BM
