By Moushira Abdel-Malek Serves 4-6 Ingredients: 800 gms spinach leaves (fresh or frozen) 1 cup cooked mined meat 1 cup cubed white goat cheese (or any other white cheese) 1 1/2 cups cooking cream 1 egg (whole, beaten) + 1 extra egg (beaten) 1 bunch coriander leaves 1 1/2 tsp crushed garlic Butter + oil Salt + pepper + allspice + grated nutmeg Method: Heat some butter and oil in a large cooking pan. Add garlic, spinach and coriander. Cover and leave to cook over low heat, allowing to release its own waters. Stir and add a small quantity of hot water or stock, if necessary. Strain well and press in strainer to release all its waters. In a glass bowl, mix spinach with egg, cheese, minced meat and cream. Season and pour in a lightly buttered oven-proof dish. Spread extra beaten egg on top of mixture and bake in a preheated oven of 210 degrees. You can substitute egg on top with grated yellow cheese. Remove from oven when top is golden. Allow to set for ten minutes and serve with a rich green salad.
